PTLens is software that corrects lens pincushion/barrel distortion, vignetting, chromatic aberration, and perspective. Very useful for correcting architectural images or landscape shots. (although not strictly Open Source - at $25 for a licence it is near as free! - you can also try it out for free for 10 images!)

Audacity used to be one of my favourite bits of software - well still is in many ways. It works really well.
However computers pre-loaded with Windows 7 contain a stereo blocker so that although you can edit audio files created in stereo on Audacity you can now only record from your computer onto Audacity in mono.

This is a great thread!
At OA North we've recently produced a load of free PDF manuals on using open (mainly GIS) source software within archaeology. They include guides to total station and GPS survey, data download, using gvSIG and QGIS (a variety of tasks), enhancing maps and illustrations in Inkscape, databases in PostgreSQL and PostGIS, 3D visualisation etc.
They are all on the OA library (search for GIS), but I've also summarised them on my website.
