Might be worth getting in touch with the local DRAC (direction regional des affaires culturelles). They oversee archaeology in each region and I guess they would have info on any commercial units about. Website is: http://www.culture.gouv.fr/culture/regions/index.html
I think evaluations are carried out by INRAP and paid for by a tax levied on every development over a certain size, excavations are put open to tender but in reality most are also done by INRAP because there are few commercial units about.
